Dairy, Gluten and Egg-free chicken nuggets

I love finding new recipes to try and have been following Mel from Healing Gracie's Gut. Her blog shares some great recipes and more. Today Mel shares a family favourite chicken nuggets.


Dairy, Gluten & Egg-free chicken nuggets

What child doesn't like chicken nuggets?

These are a fab healthy alternative for children who have food allergies and/or food intolerances. 

These chicken nuggets are packed full of goodness and so easy to make!

Nutritional Yeast is deactivated yeast and has a cheese like flavour. It provides a natural source of Vitamin B.  Quinoa Flakes are gluten/wheat free. Extremely nutritious as the only known grain to provide all essential amino acids needed by humans

Ingredients:
  • 500g Chicken Breast/Chicken tenderloins
  • Coconut Yoghurt
  • Quinoa Flakes
  • Nutritional Yeast Flakes (optional)
  • Pepper (and any other seasoning of your preference)

Method:
  • Cut up chicken into nugget size pieces
  • Coat chicken pieces in coconut yoghurt
  • In a bowl, mix together quinoa and nutritional yeast flakes with pepper (enough quantity to coat the chicken pieces)
  • Coat the chicken in the mixture
  • Pop the coated chicken nuggets into the fridge for at least 30 minutes so the mixture sets
  • Pan fry or oven bake until cooked through and the coating has turned to a nice golden colour

  1. Never heard of coconut yogurt! I would try this!! I just really hate touching chicken lately grocers me out but love eating it haha
